Resepi Rendang Daging Lembu Australia
Resepi Oleh Chef Jason Manson500 gm kiub daging lembu Australia Halal
1 bunga lawang
1 kulit kayu manis
2 biji Cengkih
2 biji buah pelaga
2 helai daun kunyit
3 helai daun limau purut (dihiris nipis)
4 sudu besar kerisik
4 sudu besar gula Melaka
Garam secukupnya
1 cawan minyak masak
1 cawan santan
Bahan B (bahan kisar)
7 biji bawang merah
10 ulas Bawang Putih
4 inci Halia
2 inci Kunyit
2 inci lengkuas
5 batang Serai
6 biji Cili Merah
Bahan C (Bakar atau Goreng tanpa minyak)
1/2 sudu kecil Jintan manis
1/2 sudu kecil Jintan putih
1/2 sudu kecil biji ketumbar
Cara memasak:
1) Panaskan periuk bersaiz sederhana dan masukkan minyak masak.
2) Tumiskan kayu manis, bunga cengkih, bunga lawang dan buah pelaga. Kemudian masukkan bahan kisar B bersama bahan C.
3) Tumis dan kacau pes sehingga sebati.
4) Masukkan kiub daging lembu yang telah dipotong dan kacau hingga sebati bersama hirisan daun kunyit.
5) Setelah semua daging lembu dan pes dicampur dengan baik, masukkan santan dan kacau rata. Masak dengan api sederhana dan masak sehingga daging lembu lembut dan lembut.
6) Setelah daging lembu dimasak, masukkan kerisik dan daun limau purut.
7) Akhir sekali, tambah gula melaka dan perasakan dengan garam.
Australian Beef Rendang
Braised beef cubes with local herbs, spices, and coconut milk
Ingredients:
500 gm Chilled Halal Australian beef cubes
1 pc Star anise
1 pc Cinnamon stick
2 pcs Clove
2 pcs Cardamon
2 nos Turmeric leaf
3 nos Kaffir lime leaf, sliced thinly
4 tbsp Desiccated coconut (kerisik)
4 tbsp Palm sugar (gula Melaka)
To taste Salt
1 cup Cooking oil
1 cup Coconut milk
To Blend
7 pcs Red shallot
10 cloves Garlic
4-inch pc Ginger
2-Inch pc Turmeric
2- Inch pc Galangal
5 pcs Lemongrass
6 pcs Red Chili
Blend (Toast or Fry in a hot pan without oil)
1⁄2 tsp Fennel seeds
1⁄2 tsp Cumin seeds
1⁄2 tsp Coriander seeds
Method:
1. Pre-heat the medium size pot and add cooking oil.
2. Saute the cinnamon stick, clove, star anise, and cardamon. Then add
blended
ingredients together with the toasted fennel seed, cumin, and coriander
seeds.
3. Saute and stir the paste well until it starts to be fragrant.
4. Add the cut beef cubes and stir to mix well with blended paste
together with the
turmeric leaf.
5. Once all the beef and paste is well mixed, add the coconut milk to
the beef and stir well. Reduce to medium heat and cook until the beef is
soft and tender.
6. Once the beef is cooked, add the desiccated coconut and kaffir lime
leaf. Lastly, add the grated palm sugar and season with salt.
