Sempena Hari Raya tahun ini, Philips Malaysia baru-baru ini telah bekerjasama dengan Chef Marina Mustafa untuk sesi memasak ‘Raya Bersama Chef Marina Mustafa’ yang memaparkan kepelbagaian serta kemudahan penggunaan rangkaian peralatan dapur Philips.
Yang mana ada mempunyai peralatan Philips Premium All-In-One Multicooker (HD2145/62) dan Philips Viva Collection Airfryer XXL (HD9630/99), bolehlah cuba resepi dan langkah berikut. Kalau tak ada pun, boleh aja gunakan resepi ni dan masak dalam kuali. Jom lihat resepinya.
Bahan A
2kg daging, dipotong segiempat sebesar 1 1/2 inci
3 sb serbuk ketumbar
1 sb serbuk jintan manis
2 sb serbuk jintan putih
2 sb serbuk jintan manis
3/4 cawan minyak kelapa
4 bunga lawang
6 pelaga
6 cengkih
4 cawan santan pekat
1/2 cawan gula melaka
1/2 cawan kerisik
1 hiris asam keping
2 helai daun kunyit
2 sk garam
1 sk serbuk lada hitam
Bahan B (bahan kisar)
15 bawang merah kecil
2 bawang merah besar
5 ulas bawang putih
2 inci halia
2 inci lengkuas
6 serai
2 sb cili pes atau 20 cili kering, direndam
2 inci kunyit hidup
*sb-sudu besar
*sk-sudu kecil
CARA MEMASAK:
1) Sapukan ketulan daging dengan kesemua serbuk rempah untuk diperap.
2) Tekankan ‘SEAR’ dan “START’ untuk memanaskan minyak.
3) Tuangkan kesemua bahan dikisar serta bunga lawang, pelaga & cengkih untuk ditumis sehingga wangi.
4) Masukkan daging kedalam periuk PHILIPS All-In-One Cooker dan masak seketika.
5) Tuangkan santan pekat, asam keping & gula Melaka bersama dan gaulkannya.
6) Tutupkan tudung AIOC dan pilih ‘BEEF’ dan tekan ‘START’.
7) Pusingkan knob diatas tusung kekanan untuk kuncikan tudungmya.
8) Apabila Rendang Tok siap, lampu akan menyala di ‘KEEP WARM’ . Pusingkan knob kekiri untuk membuka tudung AIOC.
9) Masukkan kerisik, garam & serbuk lada hitam.
10) Tekankan ‘SAUCE THICKENING’ dan ‘START’ untuk mengeringkan Rendang.
11) Gaulkan Rendang Tok sehingga kuahnya memekat. Jika ingin, tekankan ‘SEAR’ dan ‘START’ supaya mendapat Rendang Tok yang lagi kering.
12) Taburkan dengan daun kunyit apabila menghidang.

English Version
INGREDIENTS A
2 kg of beef, cut into 1 ½ inch cubes
3 tbsp ground coriander
1 tbsp ground fennel
2 tbsp ground cumin
2 tbsp ground cinnamon
¾ cup of coconut oil
4 star anise
6 cardamoms
6 cloves
4 cups of coconut cream
½ cup of grated palm sugar
½ cup of coconut paste/kerisik
1 slice of tamarind skin
2 turmeric leaves, sliced finely
2 tsp of salt
1 tsp coarsely ground black pepper
INGREDIENTS B (blend)
15 small red onions
2 large red onions
5 cloves of garlic
2 inch of ginger
2 inches of galangal
6 lemongrass
20 dried chillies, soaked & drained
2 inch of turmeric root
METHOD:
1) Smother the ground spices all over to coat the meat. Set aside.
2) Press ‘SEAR’ and ‘START’. Pour the coconut oil into the inner pot.
3) Put all the blended ingredients and the star anise, cardamom & cloves over. Saute’ till fragrant.
4) Put the marinated beef cubes into the PHILIPS All-In-One Cooker inner pot. Cook awhile.
Pour in the coconut milk, tamarind skin and palm sugar and stir.
5) Close the lid and press ‘BEEF’ and then press ‘START’. Turn the knob to lock the lid.
6) When the light flicks at ‘KEEP WARM’, open the lid and put in the kerisik, salt & pepper. Stir.
7) Press ‘SAUCE THICKENING’ button TO dry the rendang.
8) With lid open, stir the Rendang Tok occasionally until the gravy thickens.
9) Press ‘SEAR’ and ‘START’ if a dry consistency if desired.
10) Sprinkle with turmeric leaves over the Rendang Tok when serving.
